Protein Blueberry Muffins

  • 1 1/2 cups flour
  • 1/2 cup protein powder (@drinkorgain protein powder (code Ainss for 20% off))
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 medium banana banana (mashed)
  • 2 cups applesauce (about 1 cup total)
  • 1/2 cup Greek yogurt (plain 0%)
  • 1/3 cup honey
  • 2 tbsp olive oil (plus water to equal 1/3 cup total liquid)
  • to equal 1/3 cup water (total liquid with olive oil)
  • 2 tsp vanilla extract
  • 1 cup blueberries (about 3 per muffin)

Directions

    Preheat oven to 350°F and spray or line a 12-cup muffin tin.

    In a large bowl, mash the banana.

    Stir in the applesauce, Greek yogurt, honey, vanilla, olive oil, and water.

    Add flour, protein powder, baking soda, baking powder, salt, and cinnamon.

    Mix until just combined. Don't overmix.

    Divide batter evenly into 12 muffin cups.

    Place 3 blueberries on top of each muffin and lightly press them in.

    Bake for 15-20 minutes, or until a toothpick comes out mostly clean.

    Let cool for 10-15 minutes before removing from the pan and enjoy.
